Peter Brunel of the gourmet restaurant of the same name in Arco, Paolo Donei of Malga Panna in Moena and Sabino Fortunato of Gallo Cedrone in Madonna di Campiglio: three starred chefs with three different professional backgrounds and careers, who meet at the Trento Doc Festival to discuss mountain cuisine, whether at altitude or in the valley. A cuisine made, according to their words, "of quality raw materials, more than precious or expensive; of ancient, almost ancestral techniques, such as smoking, marinating, drying; but also and above all of passion, of love, that of mothers and grandmothers, of heart".
