The book, which in ten years has reached its fourth edition, marks, when compared to its predecessors, a challenging yet successful ascent towards excellence. The working group, coordinated by Angelo Pecile and consisting mainly of staff from the 'Fodder resources and zootechnical production' operational unit of the Mach Foundation's Technology Transfer Centre, not only visited the individual cheese dairies, but also supplemented the cards with lots of information on the cheese products on offer and useful information for those wishing to combine the purchase of cheese or other dairy products with a walk around the malga. The historical and socio-economic introduction on the malghe of the past is interesting, to help readers understand their current role and the steps forward in terms of structures, equipment and working methods. The chapters dedicated to the production chain of malga cheeses are indispensable. Attached to the book is the 2010 malga cheese map, which reproduces with symbols the description of the malghe subdivided by district, giving numerical coordinates for each, which may vary from year to year.
